Recipe: Caprese Corn Salad

 

Have you visited a farmers market recently? If not, this recipe is the perfect excuse to do so, because all of its ingredients can be found there. Sure, you could grab them at the grocery store instead, but I’ll bet my bottom dollar they’ll be a whole lot fresher—and tastier—bought locally!

Ingredients: 

  • Tomatoes of any kind, chopped or sliced  

Different colored heirloom tomatoes are my personal favorite.

  • Corn on the cob, steamed and sliced off the cob in chunks

High fiber content makes corn a great digestion aid.

  • Mozzarella or burrata cheese, chopped or sliced 

It’s always tough to choose—they both taste sooo good.

  • Basil

Studies suggest basil has properties that may help protect the skin from some effects of aging.

  • Extra virgin olive oil 

This is often considered the healthiest type of olive oil, because it’s extracted using natural methods and standardized for purity. 

  • Balsamic vinegar 

When eaten as part of a meal, balsamic vinegar helps regulate blood sugar.

Directions:

Step 1: 

Place the tomatoes, corn, cheese, and basil in a bowl. 

Step 2:

Mix in extra virgin olive oil. 

Step 3: 

Drizzle with balsamic vinegar and serve!
