Recipe: 3-Ingredient Goat Milk Ice Cream

 

It's Fourth of July weekend, and you know what that means—freedom, fireworks, and a whole lot of food. The only caveat? I’m currently participating in a beta test with Levels Health using their Continuous Glucose Monitor (CGM) and need to keep my sugar levels stable. So I concocted this CGM-friendly recipe to satisfy my sweets craving; I hope you enjoy it too!

Directions:

Step 1: 

Pour goat milk or goat milk kefir in a bowl. 

Step 2:

Mix in frozen pomegranate seeds or frozen organic berries. This addition will begin to firm up the liquid base. 

Step 3: 

Sprinkle organic chia seeds on top and serve!

Ingredients: 

1/3 cup goat milk or goat milk kefir 

Many people unknowingly have a sensitivity to cow milk, so I recommend trying these alternatives—both available at Trader Joe’s.

1/3 –1/2 cup frozen organic pomegranate seeds or frozen organic berries

Both pomegranate seeds and berries are rich in fiber, antioxidants, and vitamins.

3 tbsp organic chia seeds

Adding chia seeds to your mixture is crucial, because they will counteract the sugar in the pomegranate seeds or berries and prevent a glucose spike.
