Recipe: Gluten-Free Stuffing

 

Love stuffing, but want to avoid the unhealthy ingredients most store-bought varieties include? Same. That’s why I’ll be setting my Thanksgiving table with this gluten-free, grain-free stuffing from 40 Aprons instead. 

Directions:

STEP 1: 

Preheat the oven to 350°F.

STEP 2:

Heat avocado oil in an oven-proof skillet over medium heat. 

STEP 3: 

Add onion, celery, apple, mushrooms, dried cranberries, flat-leaf parsley, poultry seasoning, salt, and black pepper. Sauté until very soft—approximately seven minutes.

STEP 4:

Remove from heat, stir in almond flour, and mix well. Then add the whisked eggs and mix well.

STEP 5:

Bake for 45 minutes to one hour (or until browned on top) and enjoy

Ingredients:

  • 2 tbsp avocado oil
    Rich in unsaturated fatty acids, which are linked to better heart health

  • 3 cups onion (diced)  

    Contains anti-inflammatory properties

  • 2 cups celery (diced)

  • 1 cup mushrooms (diced)

  • 1/4 cup dried cranberries (chopped)

  • 1/4 cup flat-leaf parsley (chopped) 

    Supports heart, kidney, and bone health

  • 4 tsp poultry seasoning 

  • For added flavor 

  • 1/2 tsp salt 

    Necessary—in small amounts—for nerve and muscle function

  • 1/2 tsp black pepper 

    Enhances digestion

  • 2 cups almond flour  

    May help with blood sugar control

  • 3 eggs (whisked)
